It gives elasticity to dough, helping it to rise and keep its shape and often gives the final product a chewy texture. It can however cause some people problems, particularly when a person’s body is unable to digest or break down the gluten proteins.  Gluten free diets have become a lot more popular in the past few years, however not just for gluten intolerance or Celiac Disease sufferers.
